
So, the other day, we had a winter storm here in Charlottetown, Prince Edward Island. And, while this is nothing unusual for PEI, the thing you need to know is that everything literally shuts down save for a few snow plows and a Tim Horton’s or two. When I say everything, I mean everything. Schools, grocery stores, government offices ( both federal and provincial,) restaurants, and most all businesses.
When I was trying to decide what to make for dinner, I was limited to what was in the fridge and cupboards. Let me tell you, it wasn’t a lot. We did have storm chips though! We ended up having spaghetti carbonara and a salad. So far, so good, right?
Well, I didn’t have much lettuce but I did have carrots, frozen peas, red pepper, onions, lemons, garlic, and basil. That was literally all the vegetables in the world. My world that is and with no grocery stores open, I made due with what I had.
So, here we go! Salade a la Chef Lori!
- Whatever is in your fridge on your own storm day, OR
- little bit of lettuce
- 3 carrots – sliced and partly cooked
- 1/2 cup of frozen peas – thawed
- Half a red pepper – julienned
- 1/4 of an onion – sliced very fine
- 4-5 leaves of fresh basil – cut into ribbons
- The juice of half a lemon
- 1 clove of garlic – minced
- Salt and Pepper to taste
- 1 tsp of dijon mustard – or any mustard for that matter
- 1/4 cup of olive oil
Directions:
Take all your washed and chopped vegetables and basil and put them in a bowl.
For the dressing, in another bowl, place the lemon juice, garlic, salt, pepper, mustard, and olive oil. Whisk until it is completely combined and then give it a taste to see if you need to adjust any of the seasonings.
Now just add the dressing to the vegetables and voila! Salad is made 😅
We thought the salad was quite good and it went well with the carbonara. I think, in part because of the lemon dressing.
