French Toast

Yes, that’s right! French Toast. French toast is easy, who needs a recipe?

Well, Jocelyne and I have some things to say about french toast. The first thing is, this is one of our favourite breakfasts yet we don’t like eating dessert for breakfast. ( Huh? You say. )

It’s because a lot of people believe that you have to put stuff like vanilla, cinnamon, sugar, and what not into the egg mixture then top the toast with whipped cream, sugary fruit, and pancake syrup to boot. While that’s fine if you like eating dessert for breakfast, Jocelyne and I are purists. We like the taste of maple syrup and don’t see the need to disguise the french toast with a bunch of other ingredients. Just a little bacon on the side so you get that salty, slightly sweet flavour combination going on. Simple is good!

Here’s how we do it, breakfast for two:

  • 4 slices of white bread – it doesn’t have to be stale bread either as long as it’s thick like 3/4 inch thick.
  • Three eggs – lightly beaten
  • 2 tbsps of half & half cream
  • Real butter for the top of the toast – optional (and no stinking margarine.)
  • Good quality light maple syrup
  • Six slices of bacon – optional


If you’re including bacon with your breakfast, fry it up first. Remove bacon from the pan and most but not all of the bacon grease as well, then use the same frying pan for the french toast. ( for extra flavour)

In a shallow bowl or pie pan add the three eggs and cream to it and whisk until combined.

One by one, put a piece of bread into the egg mixture making sure the bread slice is completely covered in egg, it doesn’t have to soak in the egg mixture it just needs to be coated. Then put each slice directly into a medium hot frying pan. Once you have all four pieces in the pan, cook for approximately 3-4 minutes then flip them over. Continue to cook for another 3-4 minutes.

The toast is done when you press your finger in the middle of the bread and it springs back. Should also be a nice golden colour.

In our opinion, everything is better with butter! So, put two pieces of your freshly made french toast on a plate with three slices of bacon then top each piece of toast with a small pat of real butter and maple syrup 🍁

Pairs well with a nice cup of coffee ☕️
