For the Love of Vegetables

I was just getting these vegetables ready for roasting in the oven along with a small chicken and I thought, ” What a beautiful picture this would make.” As you can tell by now, if you’re reading my posts, I always see beauty in food.

The lovely thing about doing it this way is the vegetables take on a lot of the chicken flavour. And, it’s easy peasy! Throw everything in a roaster, season it up how you like, put it in the oven at around 375* F, and walk away. Do something else for an hour and a half. Sure you will want to check on it now and then. Give the veggies a stir but it really is that easy.

You can do it with other roasts too! Try it with beef, lamb, or pork roast? And if you’re liking your veggies a little more al dente then put them in the roaster half way through the roasting time of the meat. The vegetables really only need about 30 to 45 minutes in the oven.

Cooking awesome food doesn’t have to be complicated or time consuming. The prep time for this should only take about 10 to 15 minutes. The idea is not to over think it. If you’re using baby carrots like in the picture, just give them a bit of a wash. You don’t need to peel or chop them, just throw them in whole. I peeled the potatoes and sweet potatoes but that was only because I was using russets and I find the skins on the sweet potatoes too tough. Other than that I simply chopped them into big pieces. Then I seasoned the lot with salt and pepper and some fresh herbs from the garden. Oh yes, and a little olive oil as well. And you can use whatever vegetables you like, anything goes. Just a bit of caution if you want to put broccoli in the roaster, it tends to cook and burn a lot more quickly than other veggies. And beets tend to turn everything red! But if you’re okay with that then knock yourself out!
